Day 9

Last night was another late night. I only have one episode to go though.

Breakfast: I had a fruit smoothie. It was sooo delicious though because I had to freeze all my fruit so I didn't have to add ice and it was the consistency of an ice cream shake. So good.

Lunch: I almost forgot to eat lunch since I ate breakfast at noon, but then, after a day of swimming, I was STARVING, so I had a lemon larabar (so good) and a bag of bare fruit granny smith apple chips. Delicious. After swim lessons, I snacked on plantain chips and cashew butter which was to die for. So delicious.

Dinner: Leftover crispy carnitas from day 8, with an whole avocado made into guacamole. It was divine.

 I am now a part of the whole30 challenge on Facebook so I think I will be going until the end of July! AH! But I love it. I really do.

Day 8

I have been binge watching Orange is the New Black, and so I have been up until 2am pretty much every day, so I have been sleeping through breakfast. I believe I have mentioned this already! Anywho:

Breakfast: Two scrambled eggs with tastefully simple seasonings spinach herb and tomato basil and bacon. It was a low sugar bacon and it wasn't very good. I was definitely disappointed.

Lunch: I wasn't hungry come lunch time, so I had a larabar just to make sure that I was getting some calories in so I wasn't dying of hunger when I went to the grocery store to get some staples to make it to my Wednesday shopping day. Yeah, that didn't work out so well. I bought LOTS of snacky foods- all whole30 approved, but still- snacks.

Dinner: Crispy Carnitas. For the boys, I made tacos. For the myself, I ate the palm full of carnitas, and had an entire avocado and a handful of plantain chips. Delicious. Then, later, when I was watching OITNB, I ate a bag of bare fruit, apple and cinnamon. It's 100% organic and the ingredients list was organic apples and organic cinnamon. They were amazing and totally satisfied my need to snack during the show.

I know I should probably not be mentioning this, but my bowel movements are amazing. I poop like a normal person now instead of it always being an emergency. If you just stumbled upon my blog, I apologize- I am an over-sharer.

Day 7

It has been a week and today was a weird day. Here we go.

Breakfast: I woke up late for helping a friend move, so I drank the leftover smoothie from yesterday and at a blue berry Larabar with a shot of espresso. Then it was a bazillion degrees out and she was moving into a second story apartment, so I figured that that TOTALLY counted as a workout. I seriously sweated so freaking much and drank three bottles of water. So before I took Chase to training I made three eggs scrambles with spinach and herb and tomato basil tastefully simple spices (bacon bacon has SOY so I can't use it and I am so devastated) and topped them with ranchero sauce and Franks Red Hot. So good.

Lunch: I wasn't hungry when lunch time came around and so, when I did get hungry, I ate a coconut larabar. It was delicious. I went back to helping my friend move after Chase's training, and when we were done, I came home, took a shower, and proceeded to pass the eff out. So no real lunch for me today. Which I know is bad.

Dinner: I want pizza so freaking bad. That is what I made my husband order for himself and my son so I didn't have to cook for them. I'm sick of cooking! FOR SER. I made plantain shells so I could eat the rest of the chicken leftover from when I first made the plantain chicken tostadas. Still yummy despite not having anymore avocados to make guacamole, and I ate alllll the shells because I was so freaking hungry from not really eating lunch. Dumb.

Here is what I am feeling today, one week into my whole30 journey. When I am up late binge watching Orange is the New Black, I want to be eating, usually popcorn, but sometimes chocolate. So maybe I am PMS-ing because I have been craving chocolate and salty snacks a lot. This doesn't negate the greatness I have been feeling, it's just discouraging and hard to ignore. I miss cheese. A lot. I have added three days to my journey because I accidentally ate cheese on my third day, but I still miss cheese. I missed cheese on the burrito bowls, I miss cheese on my "tacos," I miss cheese in my eggs, I miss cheese. And creamer. I will make my own but I miss creamer and my stevia in my coffee. I will tell you for sure, I will go right back to having those when this is over. I like the sweet, creamy-ness of my morning coffee, despite the fact I am starting to appreciate my coffee black. It's not the same, even though I like it.

Otherwise, I love the food I am eating. I feel good about what I am putting into my body, and my new cooking phase has encouraged J to try new foods, which is also awesome, since he needs to broaden his palate. Pickiest eater ever. I don't feel deprived, I am full almost all the time, I don't miss soda or drinking juice, I feel good. I don't regret stating this, not even a little.

Day 6

I really need to start getting up earlier. My breakfast and lunch time are definitely too close together. Going back to work at the ungodly early hour that my job starts is going to be so.damn.hard. Oh well.

Breakfast: The leftover breakfast sausage and sweet potatoes from yesterday with two eggs over easy. Except I broke one of the yolks, so only one egg was over easy. LOL. It was so good. And a chia pouch and a shot of espresso.

Lunch: Smoothie. It's too hot. I saved 1/4 of what was left.  I also at an apple pie larabar while we were at wet n wild.

Dinner: Leftover burrito bowl.

Can you tell I am over cooking? LOL. Plus my kitchen is a disaster. My dishwasher (aka my husband) has gone on strike.

Day 5

I woke up really late and then burned my hand something fierce during breakfast, so today was a day of easy peasy food. I have a ton of left overs, which is nice, because I don't have to cook every day.

Breakfast: I made the Cowboy Breakfast Skillet. It was DELICIOUS. However, I was so hungry when it came out of the oven that I accidently touched the metal skillet that had just come out from under the broiler with my bare hand. By the time I got to actually eat it after dealing with my second degree burn (it blistered), it was cold. It was delicious cold, so I am sure it will be amazing warm. I halved the recipe and still had enough to eat for lunch and to save for breakfast tomorrow. I put Franks Red Hot on it because, well, I put the $*it on everything. I also had ice coffee with the cream I made yesterday. It's better cold. But still not the same.

Lunch: The second egg from my cowboy breakfast skillet. Just as good as it was before, still cold because my hand was anti heat. I also had a mama chia pouch.

I took Jake to wet n wild and took an Apple Pie Larabar in case I got hungry. Which I did. It was OK. The Larabars are weird a little bit. Jake likes them though.

Dinner: Leftover burrito bowls from yesterday. Delicious.

I'm eating about an avacado a day. Do you think that's bad? I feel great.

Day 4

I had the absolute worst night's sleep last night and so I don't really know if this run down feeling is sugar detox or just exhaustion. I'm pretty sure it's the latter.

Breakfast: Two scrambled eggs with guacamole and a handful of tomato cherries. I also had a cashew cookie Larabar at the movies. Today was hard. It was the first movie I have watched without popcorn in a very long time. The fact that Jake only ate a few handfuls of his kids combo and the popcorn was just staring at me did not help. I miss popcorn. I also had a shot of black espresso again.

Lunch: I had the rest of the salad from yesterday topped with the chicken I made from Sunday with the rest of the morning's guacamole. I had a glass of store bought kumbucha too and a mama chia, blackberry bliss chia squeeze that I picked up from Costco. It's very good but if you have a texture issue, you're not going to like it. Jake loves it and I love being able to get nutritious food in my son's body.

I was so extremely tired today I decided to have a glass of coffee. I miss cream, so I made this primal non dairy creamer. It was OK. It was better than just plain coconut milk but I had a hard time getting past the fact I was partially drinking a raw egg. Vanilla extract is not allowed on the Whole30, so I added the ground vanilla bean powder (which tastes gross if you taste it off your finger, FYI). I took three drinks and then fell asleep on the couch. Oops.

Dinner: I made the Whole30 approved burrito bowl and it was very delicious. I added more salt and used olive oil because I did not buy avocado oil this time around. Nobody ate it but me because I woke up at dinner time and they had leftovers before I even started cooking. I finished it off with the rest of the banana "ice cream" I made two nights ago.

Tonight I will do my meal planning and maybe go to Sprouts for double ad day, but I don't really need any food and I think I can make it till next Wednesday with what I bought for the week. We had so many leftovers that I haven't made half the lunches I planned!

Day 3

I worked out this morning and I decided to have a Cherry Pie Larabar as my prework out meal. The ingredients in the bar are dates, almonds, unsweetened cherries. It was pretty good. I also had Dutch Brother's with a friend today. She had a Kicker. I had half a black iced coffee. I enjoyed it. Not as much as I would have enjoyed it with milk and all the sugar, but it was still nice. Then I went to Costco and got some things, no sampling. Then I worked out. Then it was time to pick up my son and then it was lunch time. I technically did not eat breakfast today. Instead I had second lunch.

Lunch #1: Leftover buffalo ranch chicken stuffed peppers with ranchero sauce and guacamole. It was not as good as yesterday and it's probably a good thing that I didn't fill four peppers. It has a two day shelf life. Just saying. Not disgusting but not as good as days 1 and 2.

Lunch #2: Left over mocha rub with bag salad without the dressing or the dried cranberries (sugar added? Seriously?) topped with the rest of the guacamole from lunch number 1. Delicious and exactly what I needed because I was starting to get hangry (hungry + angry) and I was going out to dinner with my SDSIL (someday-sister-in-law) and that was after our 6 o'clock nail appointment. It was only 4.

Dinner: M wanted In n Out and I can eat there, just no sauce and no cheese. Except I forgot about the no cheese until I got home. Oops. I got a double double protein style, animal style, no sauce. That should have been two patties no sauce, no cheese, but I forgot I couldn't have cheese! That might explain why I felt so hungry when I got home- got the taste of dairy! Well, at least my mess up was right now, day three, and not at the end. Guess my Whole30 is going to be a whole33 because it makes your body need to start over when you cheat- it's an incentive to not cheat! It was really good though. I had banana "ice cream" when I got home.

Don't skip breakfast, it makes for a very hungry day. Also, I think my sugar detox is manifesting itself as acne because I have the skin of a teenage girl all of a sudden. Not pleased!

Day 2

Breakfast: I made the smoothie from Day 1 again, but this time with spinach, the pineapple and 100%, no sugar added carrot juice. I kept the cucumber though- it gives it a refreshing feeling, you know? Jake approved and it was so much smoothie that I didn't feel like I needed to make eggs. Tomorrow, eggs. A lot less fruit too. I also put dinner in the crock pot and I am sooooo excited. Seriously.My kitchen looks like a tornado went through it from yesterday so there will be a lot of leftovers, which is awesome because I lived in the kitchen yesterday.


I had an espresso shot again. I tried it hot and tried to drink it slow. It's just bitter. Smooth though so I think it's my taste buds that need to be changed. Sigh. I do miss my cream and stevia in my coffee.

Lunch: I ate leftover Buffalo Ranch Chicken stuffed peppers, except I added the ranchero sauce from yesterday. It was so good.

Dinner. I crock potted Mocha-Rubbed Pot Roast and Oh.My.God it was so good. So good. I made a bagged salad for my family and I was going to eat a different one, but without the dressing and when I pulled it out, it was spoiled! Damn! So I had 8 cherry tomatoes topped with the left over guacamole I made with lunch. Delicious.  I was feeling like I needed dessert, so I made this Banana Ice Cream. I didn't have frozen bananas, so I just used the ones I had and added ice. It wasn't really ice creamy, but it made enough for me to put the rest in the freezer for tomorrow!

I feel really good. Lots of energy, no headaches, no stomach problems. I even worked out today (and ate some extra pot roast because I HAD to! YAY!) Nothing like I was expecting reading other blogs. I keep waiting for the headaches and the cranky face to show up. I guess it has only been two days.

Day 1

I decided to create a blog to document my whole30 journey. If you don't know what the whole30 is, just click the link and join the *fun* (sarcasm). I figured writing about it would hold me more accountable. I was going to just document my weekly meals but I have already had a hiccup and had to change things around, so I concluded that day by day would be better. Whether I can keep this up for the entire 30 days remains to be seen, but I'm going to try! So here we go. Just an FYI, this is not a sponsored blog, I am not getting paid for this (unfortunately), and all the links I am adding are ones I found on my own or through pinterest.

I decided to do the whole30 after having several discussions with some friends about wheat belly. I was just going to cut out wheat and grains when I stumbled upon this program. The reason I am doing this is to change my relationship with food. While my feelings do taste delicious, I would like to find other ways to deal with my shit that are not eating or compulsive shopping. I'm on summer vacation and it only takes 21 days to make a habit, so hopefully this will help me change the way I see food and treat food. Losing some weight would also be nice, but that is not the goal of the program.  Anyway...

Here is day 1. I am using THIS to help me make sure that I am attempting to follow the guidelines to the best of my ability.

Breakfast: I made this smoothie, without pineapple or fruit juice and added half a cucumber instead of spinach because I didn't have spinach yet. Because I forgot to pick up my Bountiful Basket, forfeiting alllll the food that I pre-ordered and paid for. But that is another story. My smoothie is definitely breaking the suggested fruit serving but I won't have fruit again today and the eggs I was planning on scrambling for the protein were rotten. I have never seen a black yolk before and I hope to never see it again. Ew. There's no soy or whey or sugar allowed during the whole 30, so no protein powder in my smoothie. Which mean I also broke the protein portion allowance. Good thing I had a late breakfast, so I can have my delicious sounding lunch not too long after. Yes I had coffee this morning. I brewed a nespresso espresso shot over ice and shot it back like tequila. No sugar, no cream, not my favorite but I got my fix. I don't need to "examine why I need it" as the program suggests. I am a mother. That is why I need it.

Lunch: I had Buffalo Ranch Stuffed Peppers. I used green peppers because they were on sale and I didn't want to give my husband a heart attack with the cost of the first week's grocery bill. Tee hee.  I waited until I was hungry to make it, which was stupid because it takes an hour. Don't wait until you are hungry to make it. Also, I used "chicken tenders" because that is what I had (you know, the breast cut into tender pieces) and I thought making the whole package would be too much chicken. NOPE! Only filled three peppers instead of four. It was sooooo good. If all of the meals that I prepare are as good as this one, these 30 days are going to be bomb. I also drank a glass of store bought kombucha because I haven't received my SCOBY yet to start my own. It was delicious.

Dinner: It took me forever to cook dinner because I kept having things come up. I made Plantain Tostados with Cilantro Lime Chicken, Rancheros Sauce, and Guacamole. I didn't have a roasted pepper, so I didn't use one, which might be why I found the ranchero sauce to be lacking. It was good, but not delicious. But together, the whole meal was worth the wait. The chicken was bomb dot com by itself and top it with quac and that sauce and the plantain "shell'- oh, so good.

I hope the rest of my whole30 experience after this isn't a let down. Everything today was so delicious and I had not headaches or really felt deprived or hungry. Except when it was taking forever to make my dinner. The hardest part today was not being able to take part in the champagne toast or have the pizza everyone else was eating. But otherwise, smooth sailing so far!
